I don’t know what I liked more about this Passion Fruit Meringue Pie Recipe from Sam at Drizzle and Drip, the fact that it’s a new twist on a classic recipe or the adorable individual serving idea, but either way I thought it was pretty awesome. This dessert is as pretty as it is tasty and I think it would be a great choice for a dinner party or gathering. I’m also kind of partial to anything with a nice toasted Meringue on top so it’s obvious why the recipe caught my attention.
I think the idea of substituting a lemon curd for a decidedly more exotic passion fruit curd is not only a brilliant idea, but also a yummy one. Sam provides the recipes for each of the dessert’s three components, including that decadent passion fruit curd, so nothing is left to guesswork. If the idea of making a passion fruit curd makes you a little nervous, you could always go with a more traditional lemon curd and follow the rest of the steps for an equally as wonderful dessert.
The individual servings are a brilliant idea, especially for entertaining. It kills me to have to hack up a gorgeous looking dessert, not only because the individual slices never look as pretty served as the whole did, but also because of the time and mess involved. If you were to prepare a tray full of these beauties ahead of time, you could just carry them out and serve, each one looking as delectable as the next. The hostess in me is always thinking about this kind of stuff!
