I love all things pizza; anyway you want to give it to me! Recipes that lighten up the calories for pizza are of special interest thus my choice to try this delicious looking meal. Also, my family has a plethora of food allergies from dairy, wheat, gluten, etc. Having a gluten-free vegetarian pizza recipe in my arsenal of accommodating food options just seemed smart. However, I test all of them before offering them up at gatherings.
I spent a lot of time with my nine-year-old niece recently and decided this would be the perfect recipe to try with her. I figured she could help out with a lot of the steps, which could potentially make my life easier whilst teaching her cooking skills. Cooking with kids, even if they’re not your own, is always a good thing (as Martha would say).
This gluten-free zucchini crust pizza was served to three adults and one child. The verdict? Success! Everyone loved it, including a meat eating hunter/fisherman who normally stares at vegetarian food with dismay. My niece even insisted that I give the recipe to her great-grandma so she could make it for her too. The fresh mozzarella and basil made this a delightful meal, albeit a very light one. I would suggest this be used as an appetizer or light meal because this wouldn’t be enough to fill a typical adult for dinner. Although I think serving this with a nice salad for lunch would be perfection!
